WEDNESDAY: Mediterranean Stuffed Sweet Potatoes with Kalamon Olives

What you need

1 small cucumber
2 Colorful peppers
35gr / 1.25oz cherry tomatoes
1 small onion
2 spring onions
100gr / 3.5oz feta cheese
Latrovalis Kalamon olives
2 tablespoons capers
6 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
Freshly ground pepper
Fresh oregano

How to cook

Slice the vegetables and the Latrovalis Kalamon olives and place them in a bowl. Add the capers and the feta cheese cut in cubes. Season with salt and freshly ground pepper to your liking. Drizzle with the olive oil and vinegar and mix well. Sprinkle with the herbs and enjoy a healthy Greek salad.
