What you need

500gr / 18oz linguine
2 tablespoons extra virgin olive oil
Fresh oregano
Fresh thyme
100gr / 3.5oz Latrovalis Kalamon olives
1 tablespoon tomato paste
100gr / 3.5oz cherry tomatoes
2 spring onions
2 cloves garlic
2 colorful peppers
2 tablespoons capers
Salt
Fresh pepper

How to cook

Slice the vegetables (colorful peppers, cherry tomatoes, onions, garlic). Add 2 tablespoons of olive oil in a pan and place on heat. Saute the onion and then add the garlic and the peppers. When the peppers soften, add the cherry tomatoes, the Latrovalis Kalamon olives cut in halves, and the capers. Dilute the tomato paste in a cup of hot water and add to the sauteed vegetables. Season with salt to your liking. Cook the sauce until it is nice and thick. Boil the linguine following the instructions on the package. Drain the the linguine and add to the hot sauce. Serve with sprinkled fresh herbs (oregano, thyme) and fleshly ground pepper.
