A complete meal in itself, Dakos Salad is simple to make, delicious, nutritious, and can be enjoyed at any time of the day. A good balance of fibre, protein, and healthy fats, Dakos Salad is an excellent source of an array of vitamins, minerals, and antioxidants.

Here's what you need:

Dakos (Barley Rusks)
Scallions (green onions)
Tomatoes
Latrovalis pitted olives
Low-fat cream cheese
Feta cheese
Extra virgin olive oil
Fresh oregano
Salt
Freshly ground pepper

Here's how to prepare:

First combine the ingredients for the dressing. Mix 2 spoons of cream cheese with the feta cheese cut in small cubes. Add a little Olive oil and fresh oregano.

Then, put together the salad. Break the rusks in a bowl. Chop and add the tomatoes and scallions. Add the creamy dressing, some olives and some fresh oregano. Sprinkle with oli- ve oil and season with a little salt and freshly-ground pepper.

Enjoy the heavenly mix of ingredients and the explosion of flavors.
