Running an Olive Bar 101

The whole purpose of running an olive bar in your store is to organize a tantalizing presentation of various kinds of olives for your customers, where they will be able to admire and sample the goodness of such a healthful product. A little knowledge goes a long way in keeping your olives ‘alive’ while on display. Yes, that’s right: alive! Olives are a fermented food, and as such the process of fermentation is still active. So, invest a little time in the morning, when you open the store, a then a little more before you close and you will be generously rewarded.

In the morning, remove the olives from their packaging and place them carefully in their display containers. Spray them with a little oil. This will keep their skins nice and moist, and, at the same time, give them an appealing glow when they ‘present themselves’ to your customers.

At the end of the work day, return all the olives to their original packaging, and store them overnight in the refrigerator. Repeat the ritual next morning. This way you can be sure that your olives are well taken care of until they are bought by your customers. You can also be sure they won’t take long to sell, as they are dressed with that inviting glow.
