Olive Pancakes

When the fluffy texture of a good pancake meets the irresistibly smoky flavor of the Latrovalis Kalamata Olives, you have created a yummy treat that will surprise young and old alike whether for breakfast, lunch, or dinner.

What you need

2 cups all-purpose flour
1 teaspoon sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups milk
2 eggs
4 tablespoons extra virgin olive oil and extra for the greasing of the pan
1 cup Latrovalis Kalamata Olives

In a large bowl, add the flour, sugar, baking powder, baking soda, and salt and whisk together until well combined.

In another large bowl add the milk, eggs, and olive oil and whisk vigorously until well combined.

Cut the Latrovalis Kalamata Olives into pieces.

Slowly add the wet ingredients to the dry ingredients while whisking, making sure to break up any large lumps. Don’t overwhisk the batter to avoid the formation of bubbles. Fold in the cut Latrovalis Kalamata Olives and stir gently with a spatula.

Grease a medium-hot pan with extra virgin olive oil and pour a ladle full of the mixture in the center of the pan. Flip the pancake when the top starts to bubble up and the bottom turns golden brown and cook the other side. Repeat until the mixture is finished.

Serve your Olive Pancakes alone as a snack or accompany them with a fresh Greek Salad to turn them into a complete meal. Either way, watch your guests or family as they bite into them and wait for eyes to roll and mouths to hum in pleasure!
