With their wide variety you will be spoilt for choice. Ready pitted or even sliced, they will allow you to prepare the olive filling in no time at all.

Ingredients:

4 cups all-purpose flour
1 cup extra virgin olive oil
1 cup freshly squeezed orange juice
3 teaspoons baking powder
1 jar Latrovalis Olives Deelicious of your choice
2 green onions (scallions)
Fresh herbs of your choice (dill, parsley, mint, coriander)
1 teaspoon fragrant oregano
Poppy seeds or sesame seeds

Preparing the filling:

Chop the Latrovalis Olives Deelicious of your choice in small pieces. (Select a pitted or sliced variety for a quicker solution. A stuffed variety gives a more delectable taste. In any case, choose a different variety of olives every time and let everybody wonder how your Latrovalis Olive Pastry Bites are always scrumptious but never the same.) Chop the green onions and place them with a little extra virgin olive oil in a pan on medium to high heat. Saute them for a few minutes and add the chopped olives and the fragrant oregano. Turn everything in the pan for a few minutes to accentuate all the flavors and allow them to blend. Remove from heat and add the fresh herbs of your choice finely chopped. Allow the filling to cool.

Preparing the dough:

Sift and mix the flour and baking powder into a large bowl. Add the extra virgin olive oil and the freshly squeezed orange juice. Mix the dough with your hand. Work the dough until it becomes soft and supple. Don’t be tempted to add extra flour unless you absolutely need to. You don’t want to end up with a hard and stiff dough.

Shaping the pastry bites:

Take a small piece of dough and press it onto the palm of your hand, forming a small and thin patty. Put a spoonful of the olive filling in the middle of the patty and fold the patty around the filling. Roll the pastry bite gently in your hands into a ball, press lightly, and place on a baking tin. Sprinkle some poppy seeds or sesame seeds on the pastry bites.

Preheat the oven to 180oC / 350oF and bake for about 20 minutes until golden brown.

Bake them early in the morning, allow their aroma to waft throughout the house and watch everybody wake up with a smile on their faces.
